We all have those days where you get home from work and a long training session, and you’re far more tired than hungry. You’re hungry, no doubt, but you’d rather lie on the couch and take a nap instead of trying to figure out what to cook, then stand at the stove for an hour. Enter shrimp fajitas. You can have this on the table in less than 15 minutes, depending how fast you are at chopping.
Chop veggies and an onion, saute for a few minutes, add your shrimp, our famous fajita seasoning, and cook for less than 5 minutes to get a high-protein dinner that rivals your favorite Mexican restaurant. When I’m locking down on carbs, I eat these on slices of Bibb lettuce. Post-workout I’ll eat these on corn tortillas. I like mine with just a little guacamole, but you can add sour cream or plain Greek yogurt, salsa, tomatoes, shredded lettuce, cheese, olives, or anything else you desire.
Oh, and the fajita seasoning mix? KILLER. Stop paying for those packets at the grocery store. Our recipe should last you 3-4 meals. We make a double or triple batch and keep it on hand for any time we’re short on time but have shrimp, chicken, steak or pork hanging around.
There’s no excuse not to eat right when it’s this easy.

- 2 tablespoons olive oil
- 1 Large onion (sliced into 1/4" half-moons)
- 2 bell peppers (sliced into 1/4" strips)
- 2 tablespoons Fajita Mix (recipe below)
- 2lb raw shrimp (peeled, deveined)
- salt and pepper
- toppings (salsa, guacamole, shredded lettuce, tomatoes)
- tortillas or lettuce cups
|On medium-high heat, heat oil in a large saute pan. Add onions and peppers and cook for 3-4 minutes, or until the veggies have started to soften and onions are slightly browned.|
|Add shrimp, salt, pepper and fajita mix and mix to coat. Cook 2-4 minutes, or until shrimp are cooked through and the edges just barely begin to curl.|
|Serve with tortillas or lettuce cups for a low-carb option, and with your choice of toppings.|
Fajita Seasoning Mix
|Prep time||5 minutes|
- 1/8 cup cornstarch
- 1/4 cup chili powder
- 1/8 cup paprika
- 1 tablespoon onion powder
- 1 tablespoon garlic powder
- 1 tablespoon cayenne pepper
- 1 tablespoon cumin
|Mix all ingredients together. Use 1 tablespoon of mix per pound of meat when making fajitas. (Adjust to taste; be sure to add salt!)|
