I’m always searching for fast, easy and hearty side dishes. For dinners, I make a lot of steak, chicken or pork, and usually a roasted veggie. This quinoa dish is low in carbohydrates but keeps me full. Quinoa, by nature, cooks quickly…just as fast as rice, but is infinitely lower in carbs. This is my favorite thing to eat alongside a nice steak and Brussels sprouts.
