Garlic Mushroom Quinoa

I’m always searching for fast, easy and hearty side dishes. For dinners, I make a lot of steak, chicken or pork, and usually a roasted veggie. This quinoa dish is low in carbohydrates but keeps me full. Quinoa, by nature, cooks quickly…just as fast as rice, but is infinitely lower in carbs. This is my favorite thing to eat alongside a nice steak and Brussels sprouts.

Garlic Mushroom Quinoa

A healthy quinoa side dish that cooks in less than twenty minutes. Great with beef, chicken and fish.


  • 1 tablespoon olive oil
  • 1lb cremini or baby bella mushrooms
  • 4-5 cloves garlic, minced
  • 2 cups water
  • 1 cup quinoa
  • salt & pepper


Step 1
In a medium pot, add olive oil and set on medium-high heat. Add mushrooms, garlic, salt and pepper, and saute until tender (about 4-5 minutes). Remove from pot and set aside.
Step 2
Add water to pot, and cook quinoa according to directions. (Cooking time will vary based on type/brand of quinoa).
Step 3
Once cooked, add mushrooms into cooked quinoa and stir until mixed. Add salt and pepper as necessary.
