BBQ Pork & Pineapple Pizza

Last month, we discussed Carb Backloading as a diet strategy to help you lose fat and gain muscle. Today we’re back with an easy, CBL-friendly recipe for pizza. We used gluten-free pre-made crust (see why I cook gluten-free here), and used leftover pork from this recipe.

If you want to get really gourmet, you could cook this on the grill (and grill your pineapple there before putting it on the pizza.) We love the sweet and spicy mix of these toppings, and think you will, too.

BBQ Pork & Pineapple Pizza

This tasty pizza is flavorful, easy and fast. Use your favorite crust recipe and customize your toppings any way you want.


  • 1 Batch Pizza dough (we used pre-made gluten-free dough)
  • 2 cups Shredded BBQ Pork
  • 1/2 cup BBQ sauce
  • 1/2 Small red onion, thinly sliced
  • 1/2 cup pineapple tidbits (fresh or canned works)
  • 2 cups monterey jack cheese, shredded
  • 2 tablespoons fresh cilantro, roughly chopped


Step 1
Prepare your pizza dough according to your recipe/package's instructions.
Step 2
Spread your BBQ sauce evenly across the pizza, coming within 1/2" of the edges. Top with BBQ Pork, red onion, pineapples, and cheese.
Step 3
Bake at 350 degrees for 7-8 minutes, or until the cheese is melted and bubbly. Top with cilantro and serve hot.
