We made this recipe a few nights ago, not expecting anything besides a good meal with some cheesy deliciousness. The result, however, was so much more than that.
This meal, and I don’t proclaim this lightly, blew my wife and I away. We were able to throw it together in 20 minutes or so, and with both of us helping, it was barely any work. I should have known from the ingredients — chicken, bacon, barbecue sauce, cheese — that it was going to be good. I just didn’t expect something so great that it’s made a place on our weekly rotation (and that’s saying something, considering how good so many of our other recipes are!).
Whether you need a quick dinner, something to prep early in the week for reheatable lunches, or for the times you need to cook to impress a hot date, this chicken fits the bill. Don’t believe me? Just look at the picture if you need motivation. Now get cooking!

- 4 Large chicken breasts
- 2 tablespoons olive oil
- 1/4 cup barbecue sauce
- 3-4 pieces bacon (cooked and crumbled)
- 1 cup shredded cheese (Monterey Jack, Pepperjack, or cheddar work well)
- 1 can Rotel (tomatoes with green chiles)
- 1 bunch green onions, sliced thin
- salt & freshly ground pepper
|Preheat oven to 350 degrees. In one pan, begin to cook the bacon. Once cooked, let cool, crumble and set aside.|
|To prep the chicken, flatten with a meat hammer (or use a can covered in plastic wrap, or go old-school and use your fist), then cut in half. The goal is to make the chicken thinner and level, so it cooks at an even temperature. Sprinkle chicken with salt and pepper.|
|Add olive oil to a large saute pan and heat over medium-high heat. Once hot, add the chicken and cook thoroughly (4-6 minutes on each side, depending on thickness.)|
|Remove the chicken and place on a large baking sheet (covered in foil for easy cleaning!). Brush on your BBQ sauce, followed by a handful of cheese, then the tomatoes, bacon and green onions.|
|Place in the oven and let warm for 5 minutes, or until cheese is thoroughly melted.|
