Chipotle Beef Kebabs with Avocado Dipping Sauce

There is a really big place in my heart for spicy beef. I love everything from chili to jambalaya to barbacoa beef, all with lots of heat and spicy flavor. This beef follows a similar trend: spicy, flavorful, and it cooks quickly. The beef is supremely tasty, but the crowning glory here is the avocado dipping sauce that joins it. Made with plain greek yogurt and avocado, it is chock full of probiotics, fat and calories: all essential things in a weightlifter’s diet.

The hands-on prep of this meal is probably less than 10 minutes, and is perfect for any day of the week. Served over rice and alongside a green veggie, this is a complete meal that offers the right amounts of protein, fat and carbohydrates for recovery.

Ingredients

Beef

  • 1lb beef, cubed (stew meat works well here)
  • juice of 1 lime
  • 1/4 olive oil
  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon chili powder
  • 1/4 teaspoon sweet paprika
  • 1/4 teaspoon cumin
  • 1/8 teaspoon cayenne pepper
  • 1 clove garlic, minced
  • 1.5 teaspoons brown sugar
  • 2 chipotle peppers in adobo sauce

Sauce

  • 1 avocado
  • 1/2 cup plain greek yogurt
  • juice of 1 lime
  • 1 clove garlic, minced

Directions

Beef
Step 1
To make the marinade, mix all the beef ingredients except the steak together. Add the cubed beef and let marinate for 30 minutes.
Step 2
Place the meat on skewers and grill or broil for 5-7 minutes on medium-high heat, or until cooked to desired doneness.
Sauce
Step 3
To make the sauce, mix all ingredients together in a food processor or blender until smooth and mixed well.
