In my quest for quick lunches and dinners, I sometimes find myself adding a few ingredients to a pan, turning it on, and calling it a meal.
This dish, as the name implies, is only made of three ingredients: thinly sliced onions, a pepper, and a few links of sausage. When eating this before a workout, usually around lunchtime, I’ll throw this over a baked potato to get extra carbs. After a workout, I’ll double the amount of sausage and eat it without any extra carbs.
It takes less than ten minutes to come together, and while certainly not a unique dish, it’s tasty and perfect for athletes.
Sausage, Peppers & Onions

- 1 Small onion (thinly sliced)
- 1 red, yellow or green pepper (thinly sliced)
- 3 sausage links (I use Aidell's chicken & apple sausage)
- olive oil
- salt & pepper
|Heat a large saute pan on medium-high heat with a swirl or two of olive oil.|
|Add the onions and peppers and stir frequently until they begin to soften.|
|Slice sausage links into coins, then add to the saute pan.|
|Turn the heat down to medium-low, and cook for another 5-10 minutes or until the onions and peppers are completely softened and sausage is heated through.|
