Roasted Garlic Asparagus

Asparagus is loaded with nutrients across the whole spectrum of the alphabet: Vitamin A, C, E and K, as well as fiber, folate and chromium. All of these are essential in your diet to aid in recovery.

My favorite way to prepare asparagus is by roasting them quickly in a high-heat oven. I make broccoli, cauliflower, eggplant and zucchini the same way. Just toss your veggie of choice in a generous mix of olive oil, kosher salt and freshly ground black pepper, lay in a single layer on a cookie sheet, and roast in a preheated oven at 425 degrees for 20 minutes. However, this time around, I wanted to up the flavor. So halfway threw cooking, I pulled the asparagus out, toss 4 cloves of finely chopped garlic on the stalks, gave them a quick roll with a spatula, and let them cook the remaining 10 minutes together.

This will make your house smell awesome while it cooks. Just follow the directions and don’t think you can get all smart and try to add the garlic in when you first put this in the oven. The garlic will burn into these tiny black bits of charred disgustingness and will ruin your entire meal. Trust me. This is awesome with any of the other veggies listed, and to really dress this up, you can always sprinkle a little fresh lemon juice and parmesan cheese on the veggies as soon as they come out of the oven. If you don’t like green veggies, this recipe will change your mind.

Roasted Garlic Asparagus

Serves 4

  • 1lb asparagus
  • 4 cloves garlic (finely chopped)
  • olive oil
  • kosher salt and freshly ground pepper


Step 1
Preheat your oven to 425 degrees. Prep your asparagus by cutting off the bottom 1/2-1", where the stem is thick and tough.
Step 2
Place trimmed asparagus on a large baking sheet. Drizzle generously with olive oil, then top with kosher salt and freshly ground black pepper. Toss to coat.
Step 3
Place in the oven to cook for 10 minutes. In the meantime, chop your garlic. After 10 minutes, add the garlic to the asparagus and give it a light roll with a spatula, then place back in the oven for the remaining 10 minutes.
Step 4
Asparagus is done with the tips are starting to turn crispy.
