Sweet potatoes are, as far as I’m concerned, one of the BEST non-protein foods an athlete can eat. I love baked sweet potatoes, and can eat them multiple times a week. But sometimes, I’m just over it. I love mashed potatoes too, but I know they don’t offer nearly as many vitamins. Plus, there’s the urge to add a whole stick of butter, cream, bacon, cheese and lots of other stuff to it. There’s a time and place for all that, so if you’re looking for a leaner alternative, these mashed sweet potatoes do it.
Pre-cook the apples a bit with some cinnamon, add those to the mashed sweet potatoes along with some brown sugar and cinnamon (and if you’re looking for calories and a creamier texture, cream cheese or greek yogurt), and you have a healthy side dish that’s perfect anytime.
These potatoes will be on our Thanksgiving table this year. They’re sure to please the adults and kids alike, and offer me some great fuel for my post-turkey workout.
