Mashed Sweet Potatoes with Apples

Sweet potatoes are, as far as I’m concerned, one of the BEST non-protein foods an athlete can eat. I love baked sweet potatoes, and can eat them multiple times a week. But sometimes, I’m just over it. I love mashed potatoes too, but I know they don’t offer nearly as many vitamins. Plus, there’s the urge to add a whole stick of butter, cream, bacon, cheese and lots of other stuff to it. There’s a time and place for all that, so if you’re looking for a leaner alternative, these mashed sweet potatoes do it.

Pre-cook the apples a bit with some cinnamon, add those to the mashed sweet potatoes along with some brown sugar and cinnamon (and if you’re looking for calories and a creamier texture, cream cheese or greek yogurt), and you have a healthy side dish that’s perfect anytime.

These potatoes will be on our Thanksgiving table this year. They’re sure to please the adults and kids alike, and offer me some great fuel for my post-turkey workout.

These tasty mashed sweet potatoes are a twist on the traditional side dish. The sweetness of the apples adds great flavor to the dish while adding fewer calories than additional sweeteners.

Ingredients

  • 4 sweet potatoes (peeled and cubed)
  • 2 apples (peeled and diced in medium-sized chunks)
  • 1 teaspoon cinnamon
  • 1/4 cup brown sugar
  • 2 teaspoons cinnamon
  • 2 tablespoons butter
  • 1/4 cup cream cheese or greek yogurt (optional)
  • dash of salt & freshly ground pepper

Directions

Step 1
Preheat oven to 350 degrees.
Step 2
Add diced sweet potatoes to a pot of boiling water. Bring to a boil and cook for 5-10 additional minutes, or until you can pierce sweet potatoes easily with a fork.
Step 3
Mix diced apples with 1 teaspoon of cinnamon, and bake in preheated oven for 10 minutes until soft. Watch these closely to prevent burning.
Step 4
Drain cooked sweet potatoes and add to a large mixing bowl. Mash the potatoes until reaching desired consistency.
Step 5
Mix remaining ingredients until well blended. Serve until hot.
