Slow Cooker Barbacoa Beef

If you love the crockpot carnitas, as many, many of you do, you will want to make this recipe ASAP. With only 3 ingredients (one of which is water!), you’ll have a ridiculously easy and tasty meal that will bulk up your protein intake. The more meat you cook, the more you can eat throughout the week.

I’m not going to talk your ear off about this beef, just suffice to say that it can be made mild or spicy, and I recommend the spicy.

Barbacoa Beef

This spicy shredded beef is great for burritos, tacos, or just served on rice. Spicy chipotles give this plenty of flavor and lots of spice.


  • 2lb beef roast (chuck roast is good here)
  • 1 can chipotles in adobo sauce (found in the International aisle of your grocery store)
  • 1/2 cup water


Step 1
Add everything to your slow cooker, dumping the chipotles on top of the roast. (The more you add, the spicier this will be. Start at 2 for mild and increase from there.)
Step 2
Cook on low for 6-8 hours, or high for 4. (Low is recommended).
Step 3
Remove from slow cooker, shred with two forks, and top with a bit of the cooking liquid to keep moist. (The liquid is super spicy!)
Step 4
Serve over rice or on tortillas and top with your favorite salsa, slices of avocado, and cheese.

    So enjoyed this. I like having the basic meat on hand to put into anything I think of for the day. I saved the liquid I didn’t use up front for reductions or liquid to simmer vegetables in. First day, in tortillas. Second day, over rice w simmered tomatillas. Third for bkfst in an omelet w cooked power greens and cheese. Thx again for sharing. I just love the simplicity. Any heavily combined recipe I’d be sick of right up front.
