I hope I’m not sounding like a broken record here, but this soup was amazing. I mean, I wouldn’t share any recipes with you if they were crap, so you have to believe me when I say they’re all great. But this…I had thirds and fourths of this soup. A few of my teammates were over when this was served, and even though they “weren’t that hungry,” I saw them get seconds and thirds. Just the name of this should make your mouth water.
Now, I love me some pizza. But with my poor wife’s allergy to all things wheat and gluten, traditional pizza just isn’t found in my house unless she’s out of town. This soup was a VERY welcome addition to our table. What I love most about this soup is that it is healthy. No, seriously. Tomatoes, beef, peppers, mushrooms, water. Pepperoni is really the only questionable ingredient, and if you’re super health conscious, you can skip it. I think it’s fine in moderation. This soup is just packed with protein and veggies, and offers some great nutrition as well as taste. Hard to find that in a greasy slice of pizza.
It’s pretty simple to make, too. It does require some chopping, but once you’re past that, it comes together really quickly and only takes a few stirs. Because the veggies aren’t really cooked down, they taste just like they were on a pizza: cooked, but still crunchy. Top it with shredded cheese, black olives, or anything else that you want on your pizza, and you have the perfect meal.

Supreme Pizza Soup

- 2lb lean ground beef
- 6oz pepperoni
- 1 green pepper (chopped)
- 1 cup mushrooms (chopped)
- 1/2 Large red onion (diced)
- 2 cloves garlic (finely chopped)
- 2 cans crushed tomatoes (28-oz each)
- 4 cups water
- 1/2 tablespoon basil
- 1 teaspoon oregano
- 1/8 teaspoon cayenne pepper (or substitute with 1 teaspoon red pepper flakes)
- fresh ground pepper
- shredded mozzarella cheese
- sliced black olives
|In a large stockpot, brown the ground beef until cooked through and no longer pink.|
|Add the pepperoni and cook for a minute or two.|
|Add the onions, peppers, mushrooms and garlic and continue cooking on medium-high heat for 5 minutes.|
|Add the tomatoes, water, spices, salt and pepper. Stir.|
|Bring to a boil, then reduce to a simmer for 30 minutes.|
|Serve with any pizza toppings you desire. Shredded mozzarella and black olives are fantastic choices.|
