Super Fast Skillet Steak with Veggies

Beef? Yes. Onions? Yes. Mushrooms? Love ’em. Throw it all together and in minutes you have a meal worthy of a weightlifter. If you have those three ingredients, olive oil, salt and pepper on hand, you’re all set. Not only is this ready quickly, but you can use cheaper cuts of beef and save those tasty ribeyes for another feast. I know this doesn’t look like much, but I promise you it is delicious.

While this meal is fantastic enough and easy as-is, feel free to change the veggies up as you see fit. Tomatoes? Sure. Zucchini, squash, eggplant, peppers, and anything else that tickles your fancy would be great.

This dinner is quick and easy, and loaded with steak. Using cheap cuts of meat makes this dinner affordable, too.

Ingredients

  • 1lb beef steak (london broil or chuck roast will work)
  • 1 Large onion
  • 1 tablespoon olive oil
  • 8oz mushrooms (sliced)
  • seasoned salt (to taste)
  • salt
  • pepper

Directions

Step 1
Heat 1/3 of the olive oil in a skillet.
Step 2
Slice meat into strips, no thicker than a 1/3 inch.
Step 3
Add to pan and cook for two minutes, stirring halfway in between (or flipping meat over).
Step 4
Season with salt, freshly ground pepper, and seasoned salt.
Step 5
Empty browned meat into bowl and heat another 1/3 of olive oil in pan.
Step 6
Slice onion into rings, no thicker than steak.
Step 7
Add to pan and cook for 2 minutes.
Step 8
Season with salt, freshly ground pepper, and seasoned salt.
Step 9
Remove onions and place with meat.
Step 10
Heat the remaining olive oil and add sliced mushrooms to pan.
Step 11
Season with salt, freshly ground pepper, and seasoned salt.
Step 12
Cook for two minutes, or until soft and browned.
Step 13
Add meat and onions back in pan, cook another two minutes to let flavors blend.
Step 14
Serve.

    Looks almost too simple to be good but I just made this and it’s great. Good balance of meat to onions and mushrooms. Can’t get much simpler than this for a good, filling meal.
